Chicken Sausage Kale Soup

As the weather is getting colder there is nothing better than some hot healthy soup! This one was a crowd pleaser for sure in our family. Give it a try.

Chicken, Kale, Sausage Soup

6 boneless skinless chicken thighs

4 cups chicken broth

1 onion

3 cloves garlic

3 carrots

3 stalks of celery

1 large can diced tomatoes

1 medium can cannellini beans (white kidney beans)

1 packet of spicy andouille sausage

1 bay leaf

2-3 tsp salt Fresh kale (buy a bundle or bag)

Season chicken with salt, pepper, and some paprika.

Pour 1/4 cup of olive oil into soup pot. Add chicken. Brown chicken 3-4 minutes on each side. When chicken is done add broth. Set on simmer. Chop onion, celery, garlic and carrots (chop thin). Add some olive oil to a separate frying pan, toss in veggies fry until they are soft. Add to soup pot. Add can of tomatoes (with juice), beans (strained), salt and bay leaf to pot. Slice sausage, brown in pan. Set the sausage on a plate with a paper towel to sop up grease. Add to pot.  Simmer for 3-4 hours. Half hour before the soup is done, chop kale into spoon manageable pieces and add to pot (add as much or as little as you want).  Serve with bread and top with Parmesan cheese.
