Fall Fun, Recipes, Trips and more!

Fall is in the air and so is my husbands cooking in the kitchen!! Here are some of my favorite healthy fall treats and what we have been up to these past two month from the kids, to coaching, my team mates, challenges, P90X classes, more recipes and more!

First I have to share some yummy recipes we can been trying this fall!

This baked apple cinnamon oatmeal is a great way to start a fall day.

Total Time: 45 min.
Prep Time: 5 min.
Cooking Time: 40 min.
Yield: 6 servings

Ingredients:
• 2 cups apples, chopped
• 3 cups old-fashioned rolled oats
• 2 cups non-fat milk
• ¼ cup unsweetened applesauce
• 1 tsp. butter
• 3 Tbsp. honey
• 1 egg white, beaten
• 1 Tbsp. brown sugar, packed
• 1½ tsp. baking powder
• 1 tsp. ground cinnamon
• ¼ tsp. salt
• 1 spray olive oil cooking spray

Preparation:
1. Preheat oven to 400 degrees.
2. Lightly coat a 2-quart baking dish with cooking spray.
3. In a large bowl, combine oats, baking powder, cinnamon, and salt.
4. In another bowl, mix together milk, brown sugar, and applesauce.
5. Pour mixture into baking dish. Bake for 20 minutes.
6. Remove dish, stir, fold in chopped apples. Bake for 20 more minutes or until top has browned. Serve.

I tend to get a little squash crazy! My husband makes a mean Squash Soup. Might be my 10 ten reason why I love him. The man can cook!

Serves 4:
2 tablespoons butter
1 small onion, chopped
1 stalk celery, chopped
1 medium carrot, chopped
2 medium potatoes, cubed
1 medium butternut squash – peeled, seeded, and cubed
1 (32 fluid ounce) container chicken stock
salt and freshly ground black pepper to taste

Directions

Melt the butter in a large pot, and cook the onion, celery, carrot, potatoes, and squash 5 minutes, or until lightly browned. Pour in enough of the chicken stock to cover vegetables. Bring to a boil. Reduce heat to low, cover pot, and simmer 40 minutes, or until all vegetables are tender.
Transfer the soup to a blender, and blend until smooth. Return to pot, and mix in any remaining stock to attain desired consistency. Season with salt and pepper.

My favorite healthy APP recipe for those hardy football games!! Very festive, healthy and simple! Dish the chips. The kids love the crunchiness of the snow peas and get their protein from the hummus.

The kids are having a lot of fun this fall. We started John in his first ever Hockey practice. Who was more scared? John or his mom? ME!!! I have never played hockey, so when it came the equipment I arrived about 45minutes early to see how I would dress him up. Whatever, we all learn and I did it! John was so determined. He had SO much fun and Will and I loved watching him. The coach said he was so determined to not give up. Proud!

California Team Beachbody Leadership Event, Dana Point California.

Last week I had the privilege to attend the annual Team Beachbody Leadership Event at Dana Point California with 250 other leaders in the organization. The last I was in California was when I was in 5th grade with my family, this year all five of us would return 15 years later, have never been to California so this was a special trip for my family and Team Boom. Dana Point is an absolutely breath taking place! The view is amazing and the weather could not be any more perfect!

We arrived on Thursday afternoon and the sun was shining and there was not a cloud in the sky!

Let me just start by giving you a little background. In order to qualify you have to be a 2 Star Team Beachbody Coach, which is very hard! I was CRUSHED when I didn’t qualify to be at the event, however my mother did and she was able to bring one of her Diamond Coach, I was so honored to attend! It was on my goal board and I didn’t get there but that is my goal for next year! Last year around this time I was having a little pity party for myself seeing everyone else reach Diamond, 2 Star etc. I decided last year I had two options. I could sulk, quit and throw a pity party or I could decide that from this point forward I was going to do whatever it took to get there! I decided to view this NOT as a road block but as a CHALLENGE that I will overcome! I am not ruled by the fear of failure but instead of the hope that I will be brought success because of my hard work!

Here we are working out with other coaches. The final night there was a celebration and during the day we attended meetings and seminars with top coaches. I took so many notes and came back determined to help all my coaches reach their goals!

Next let me tell you about my brother. He became a coach 5 years ago. He introduced us to Team Beachbody and this amazing opportunity to help others change their lives! He is the definition of Consistency and hard work. Well safe to say as a little sister you always look up to your big brother and I 100% do! Hope one day I can be a leader like he has shown me. So here he is in Las Vegas winning his award for 3 Star Diamond Coach.

After the Leadership event my family was able to spend Sunday in Venice Beach. If you told me I would be working with my family I probably never would have believed you. What I love most about the coaching is actually just this!! We have a lot of family members on Team Boom and I actually think this what makes us so unique as a Team, WE ARE FAMILY!!!

MORE TRIPS: To Canada we go!

So one of the things I am loving about coaching is actually the lifestyle is can provide! I am not hooked to a 8-5 schedule anymore (lets be honest it was more like 8-8). I can do my job anywhere, as long as I have a computer and internet access! So getting back from Leadership I had a lot to do, but I was able to do a lot in the car, (beauty of iphones) to get my Challenge Groups up and running and get my coaches started right.

Once we got back it was the beginning of October. Each month we have Team Boom Challenges where customers commit to a program and shakeology once a day. This is actually how I started with coaching. I committed this past January to a Ultimate Reset Challenge and I was blown away at the results I decided to start my own challenge group and have others join me on my journey! This is run in a private facebook group, the customers all get AMAZING support, motivation and RESULTS when they commit. Above all its such a fun and inspiring group. The contestants also get a chance to win a free workout program. This week we chose our T25 JULY 10 Week Challengers. It was so tough because everyone did an amazing job! Here are few of the highlights!

While in California we learned a lot about the Apprentice Ship Program! My teammate and I Alyssa Sardelli decided to run our Coach Basics group together! I am blown away by everyones commitment, but more importantly it has give us a chance to really get to know each other. So thankful for my team. I look forward to the many more Coach Basics we will have for our up and coming coaches helping others live a better life!
