Healthy Crock Pot Recipes

There is nothing better than a hot meal during the winter. There is nothing more relaxing knowing all you have to do is throw it in the pot and let it cook! Here are some of my favorite healthy crock pot recipes and Heart Harty Recipes we love, as a family, this winter. Enjoy and feel free to share with others!

Perfect Side  Tomato and Avocado Salad

 

Ingredients

4 stem tomatoes, sliced
1 Tbsp of za’atar
1 avocado, cubed
Juice of 1 lemon
Handful of Kalamata olives, sliced
Handful of sliced scallions
1 Tbsp fresh basil, sliced in ribbons
2 Tbsp extra virgin olive oil
Feta cheese, crumbled to taste

Instructions

Lay the tomato slices on a plate or serving tray and sprinkle with the za’atar
Toss the avocado and lemon juice together in a bowl. Once mixed, place the avocado on top of the tomato slices
Sprinkle on the chopped kalamata olives and scallions
Top with fresh basil and a drizzle of olive oil
Sprinkle on the feta cheese
