Clean Eating Swaps

I am hosing this year for Thanksgiving. I am anticipating 15 people with kids. I use to stress about the holidays because I would stuff myself clean and be stuck in a rut. Well, I am here to tell you and show you some yummy side dishes and amazing dessert that your family will think it so good they wont know the difference.

Thanksgiving is a day to literally stuff yourself like the turkey on your table! It puts people into the infamous turkey coma! Then you unbutton your pants, lay on the couch and question why the heck you ate so much! Seriously you can’t deny that you have totally been there! I have for sure!

We all need that one day to together with our family and just have a great time and perhaps bring one of these tasty treats with you!

So this week is our holiday survival guide!!! Today is recipe day. How can you tweak the foods you love to save your waistline???

Baby Greens with Goat Cheese, Beets and Candied Pecans – This one had me at candied pecans.

Creamy goat cheese with crunchy sweet pecans and red beets topped with a honey balsamic vinaigrette is like a symphony in your mouth. This salad will make you look like a culinary whiz!

I still have no power due to Hurricane Sandy so I thought I would re-post an older recipe from the archives. If you are without power, this doesn’t require an oven and would be perfect for Meatless Monday.

Baby Greens with Goat Cheese, Beets and Candied Pecans
Servings: 4 • Serving Size: 1/4 • Old Points: 7 pts • Points+: 8 pts
Calories: 267 • Fat: 19.5 g • Protein: 7 g • Carb: 19 g • Fiber: 2 g • Sugar: 14 g
Sodium: 211 mg

Ingredients:

4 oz Chavrie goat cheese log
8 cups mixed baby greens
4 small red beets, cooked and cut*
2 oz glazed pecans (I used Emerald Pecan Pie)
For the honey balsamic vinaigrette:
2 tbsp balsamic
2 tbsp extra virgin olive oil
1 tbsp honey

Directions:
Make vinaigrette by whisking olive oil, balsamic and honey until smooth. In a large bowl toss greens with vinaigrette and mix well.

Evenly divide greens between four bowls. Top each bowl with one beet, 1 oz goat cheese and pecans. Serve immediately.

*boiled the beets in water until soft, but they can be roasted in the oven as well.

I don’t know about you guys, but when I was overweight..I used to eat all types of brownies. But those Little Debbies weren’t very good for me. LOL Now I have a nutritious version of one of my favorite snacks! Hope you guys enjoy this!

Ingredients:
1 Scoop of Regular Chocolate or Chocolate Vegan Shakeology
1/2 Cup of Natural Smooth Almond Butter
1 Medium Banana (Smashed)
1/4 cup of quick cooking rolled oats ( I used Quaker Oats 1 Minute Oats)
3 Tablespoons of Chopped Walnuts, Almonds, or Sunflower Seeds (Your Preference)

Preparation
1.Combine Shakeology, Almond Butter, Banana, Oats, and Walnuts into a medium bowl.
2. Shape the mixture into 1 inch size balls (It should make around 12 balls) place in to a airtight container.
3. Refrigerate for at least 1 hour before serving to your friends and family.

Nutrition Facts:
Calories: 101
Protein: 5g
Carbs: 8g
Fats: 6g
